The IUPAC (International Union of Pure and Applied Chemistry) name of oxalic acid is known as ethanedioic acid (C2H2O4). It is an organic acid that is formed organically in nearly all plants such as fruits and vegetables. It contains various forms of acids, few of which are citric acid, malic acid, ascorbic acid, oxalic acid, etc. An average size tomato constitutes around 50 mg of oxalic acid. Normally a riper tomato contains a higher content of oxalic acid in comparison with a less ripe tomato.
