Answer: Transverse waves can be polarised, whereas longitudinal waves never. The particles are already moving in one dimension, which is the direction that wave is travelling. Since they are all transverse waves, electromagnetic waves can all be polarised. Ultrasonic waves, or sound waves, are the only longitudinal waves available. So, there is no polarisation of the ultrasonic waves.
